Chicken Burrito Skillet
This easy chicken burrito skillet cooks in one pan on the stove pinnacle. Your favored burrito elements are cooked up in a single skillet pan. smooth chunked chook, cheese, rice, beans, and seasonings simmer and cook dinner to perfection in 30 minutes!

I referred to the day gone by that i have been depending heavily on 30 minute meals these days. This hen burrito skillet was a very glad surprise! i've by no means had lots luck with one pan skillet dinners. both it’s too much liquid, does no longer prepare dinner well, no taste….. except for these fowl ranch skillet fajitas. they're so suitable.
I was simply now not awaiting a good deal from this fowl burrito skillet but i used to be very surprised and satisfied with how delicious it was and the way properly all of it cooked collectively. And who can withstand that melty cheese on pinnacle?!

Ingredients
- 2 tablespoons olive oil (divided)
- 2 boneless, skinless chicken breasts (cut into 1" chunks)
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1 cup uncooked basmati rice
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (14.5 oz) petite diced tomaotes, drained
- 1 teaspoon cumin
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon chili powder
- 2 1/2 cups chicken broth
- 1 cup shredded cheese
- green onion, chopped tomatoes, sour cream, avocado
Instructions
- Sprinkle salt and pepper over the chicken pieces. Toss to coat.
- In a large skillet, heat 1 tablespoon oil over medium-high heat; sauté chicken until no longer pink and slightly browned, about 5 minutes. Remove chicken from pan. The chicken does not need to be completely cooked through but it should be cooked most the way (it will look cooked).
- In same pan, heat remaining 1 tablespoon oil over medium-high heat; sauté rice until lightly browned, 1-2 minutes (watch carefully so it won't burn).
- Stir in beans, canned tomatoes, seasonings and broth; bring to a boil. Place chicken on top (DO NOT stir into rice mixture). Turn heat down to medium-low heat and let simmer, covered, until rice is tender and chicken is no longer pink, about 20 minutes or until all the liquid is absorbed.
- Remove from heat. Sprinkle with cheese. Let stand, covered, until cheese is melted. Serve with all your favorite burrito toppings, flour tortillas, or over shredded lettuce.
