Ingredients
- 1 rotisserie chicken
- 2 tomatoes
- 5 oz. cooked bacon
- 1 dill pickle
- ½ cup mayonnaise
- 6 oz. shredded cheddar cheese
- salt and pepper
- Serving
- 6 oz. leafy greens
- 4 tbsp olive oil
Instructions
- Preheat the oven to 400°F (200°C).
- Shred the rotisserie chicken into bite-sized pieces and place in a medium-sized bowl.
- Dice (cooked) bacon and chop up the tomatoes and pickles. Mix all three together with the chicken. Add mayonnaise and ⅔ of the cheese and stir. Season with salt and pepper to taste.
- Pour the mixture into a greased baking dish. Sprinkle the remaining cheese on top and bake for about 20 minutes or until golden brown.
- Serve with leafy greens and olive oil.
